Season generously all over, brown hard in a heavy pan until deeply coloured on all sides, then transfer to a lidded casserole with beef stock, a split head of garlic, a few sprigs of thyme, and a sliced onion. Cook in the oven at 140°C for 4–5 hours until a skewer passes through with no resistance and the joint is yielding and sticky. Rest for 30 minutes before slicing or pulling. Serve sliced with roasted root vegetables and the reduced braising liquid as a sauce, or pulled into a roll with pickled red onions and a good mustard.
