Our sandwich steaks are cut thin from grass-fed British beef, the grass diet gives the meat a natural depth of flavour that holds up even at this thickness. Cook in a very hot pan with a little butter for 1–2 minutes per side: thin steaks cook quickly and are best served with just a blush of pink at the centre. Rest for 2 minutes while you prepare the bread. Serve in a good sourdough roll with horseradish cream, watercress, and thinly sliced pickled onions for a combination that's genuinely hard to improve on. Or go the classic route: fried onions, French mustard, and mature Cheddar.
