Cook from room temperature in a pan or on a barbecue over medium heat for 5–6 minutes per side until cooked through. Serve in a toasted brioche bun with a cool spoonful of Greek yoghurt, sliced cucumber, and a handful of fresh mint. Or skip the bun and serve with flatbreads, a salad of tomato and red onion, and a good tahini drizzle.
