The breast meat is dark and dense, best eaten pink, overcooked pigeon becomes tough quickly. For a whole bird, roast at high heat (220°C) for 15–18 minutes and rest for 5 minutes before serving. Or spatchcock the bird and cook breast-side down in a hot pan with butter and thyme for 8 minutes, then rest. The legs are good slow-braised and picked for pasta or risotto. Serve the breast sliced over a watercress and walnut salad with a little pomegranate molasses in the dressing.
