Who mills your flour?
Gilchesters Organics, who grow and mill organic wheat in Northumberland. We stock their strong white and wholewheat flours, both milled for proper home baking rather than supermarket shelf life.
What is strong flour, and when do I need it?
Flour milled from higher-protein wheat, which builds the gluten that bread needs to rise and hold its structure. Use strong white for loaves, rolls and pizza dough; for pastry and cakes a softer flour serves better.
Can I bake bread with the wholewheat flour?
Yes. Gilchesters wholewheat makes a denser, nuttier loaf; many bakers blend it with strong white for a lighter crumb that still tastes of the grain. It also makes an honest, well-flavoured pastry.
Are the oats good for more than porridge?
Hodmedod's organic rolled oats are the porridge standard, but they work just as hard in flapjacks, crumble toppings and homemade granola, and a handful thickens a stew or meatloaf mix quietly and well.
Is there a vegan granola?
Yes, the almond and date house granola is vegan. The almond and chia and the pecan and cacao recipes round out the three.
