What lamb offal do you sell?
Lamb's liver, lamb's kidneys and sweetbreads, from the same grass fed, native breed flocks as our joints. Three of the best-value and most overlooked things on the whole animal.
What are sweetbreads?
The thymus gland, and far finer than the name suggests: mild, creamy and delicate. Soaked, blanched and pan-fried in butter until golden, they are a restaurant delicacy that costs a fraction at home.
How do I cook lamb's kidneys?
Halve, snip out the white core, and cook fast: devilled kidneys on toast is the classic, done in ten minutes with mustard, cayenne and Worcestershire sauce. They should still blush inside.
Why is lamb's liver milder than other livers?
Youth. Lamb's liver comes from a younger animal, so it is more tender and gentler in flavour than ox liver, which makes it the right liver to start with: floured, flashed in a hot pan and never overcooked.
