What is spelt pasta?
Pasta made from spelt, an ancient wheat grown long before modern varieties. Pastificio Carleschi's organic spelt pasta has a nuttier, deeper flavour than standard durum pasta and holds sauce beautifully.
Is spelt pasta gluten free?
No. Spelt is a wheat, so it contains gluten. Some people find older grains easier to digest, but if you are coeliac or gluten intolerant, spelt pasta is not for you.
What pasta shapes do you stock?
Pastificio Carleschi's organic spelt mezzi rigatoni, conchiglie and casarecce, plus a spelt and pea fusilli. Rigatoni for ragùs, conchiglie for catching sauce, casarecce for pesto and quick pan sauces.
What is IBIS rice?
Jasmine rice grown in Cambodia under a conservation scheme that pays farmers a premium for protecting the endangered giant ibis and its wetland habitat. We stock the white and brown long grain jasmine.
Which rice should I use for which dish?
Jasmine for anything fragrant, from curries to stir fries. Basmati, white or brown, for pilafs and everyday sides. Biona's brown risotto rice takes longer than a classic arborio but brings a proper nutty depth.
Does brown rice really take longer to cook?
Yes, roughly twice as long as white, because the bran layer is still on. That layer is also where the fibre and much of the flavour live, so for everyday cooking it repays the extra 20 minutes.
