Four skinless wild wood pigeon breasts, quick to cook, deeply flavoured, and enormously versatile for salads, starters, and midweek dinners that deserve something genuinely wild.

Skinless pigeon breasts take the commitment out of cooking wild game: no plucking, no butchering, just the most flavourful part of the bird ready to cook in minutes. Each breast is dark, dense, and richly flavoured, the taste of a genuinely wild bird that's been feeding on grain and seeds in British woodland rather than eating pellets in a barn. The key is not to overcook them: pigeon breast should be served pink in the centre, which means a hot pan with a little butter and oil, 2–3 minutes per side, and a generous rest. Slice thinly and serve over a salad of bitter leaves, crispy pancetta, and toasted pine nuts with a warm shallot and red wine vinegar dressing. Or sear and serve as a starter on a parsnip purée with pickled blackberries alongside. They're also excellent in a warm lentil salad or as a quick mid-week dinner with roasted heritage carrots and a red wine reduction. Four breasts per pack, enough for two as a main course.

Delivery

We offer Next Day Delivery on orders placed by 1pm Monday to Thursday (excluding Highlands & Islands postcodes). During busy periods such as Christmas and Easter, cut-off times and lead times may change.

Storage

All of our meat is delivered frozen, ready to go straight into your freezer. Once defrosted, it can be stored in the fridge and enjoyed within three days.

Our ambient goods can be safely stored in a cool, dark place.

All dairy products should be kept refrigerated and used before the best before date shown on the packaging.
