Wild rabbit is one of the most honest and underrated meats in British cooking, genuinely wild, completely free-range by definition, and with a mild, lean flavour that sits somewhere between chicken and the more assertive game birds. The whole rabbit comes prepared for cooking and is enough for two to three people depending on the recipe. The most forgiving way to cook it is slow braising: joint the rabbit into legs, saddle, and shoulders, brown in batches in a hot pan with a little lard or butter, then braise in white wine, chicken stock, mustard, and tarragon for an hour and a half until the meat is tender and coming away from the bone. The resulting sauce is delicate and fragrant. Alternatively, marinate overnight in olive oil, garlic, and rosemary and cook slowly on a barbecue or under the grill. Wild rabbit is a properly sustainable choice, an animal with no environmental footprint beyond the countryside it already inhabits. From British countryside.
