Product details

A ready-diced mix of wild game meats from British sources, the ideal combination for a serious game pie or slow-cooked stew without the effort of sourcing each game meat separately.

A great game pie depends on the right combination of flavours, usually a balance of the more assertive dark game meats alongside something milder, and this wild game pie mix has been put together with that in mind. The selection typically includes a combination of wild rabbit, pheasant, and pigeon or venison, all diced to a consistent size for even cooking. Brown in batches in a hot pan with butter until properly coloured, then transfer to a casserole dish with good stock, red wine, root vegetables, and a bouquet garni. Cook in the oven at 160°C for 2 hours until the meat is tender and the sauce has thickened, then transfer to a pie dish, top with good shortcrust or puff pastry, and bake until golden. The flavour of a proper game pie is something that no substitute can replicate, layered, deep, and quintessentially seasonal. A 250g pack serves two in a pie or three to four in a stew.

Pork Shoulder

We cooked the rolled pork shoulder last Sunday and it was outstanding. Proper crackling, rich flavour and no watery mess in the tray. You can really taste the difference in how the animals are raised.

Slow Grown Whole Chicken

The chicken was full of flavour and roasted evenly. Nothing pumped or artificial about it. Just proper, honest food and a world away from supermarket birds.
