Bavette is a long, slender cut taken from the lower belly, much loved by butchers for its honest depth of flavour. Our Pasture Fed Bavette Steak comes from slow-grown native cattle, reared on small family farms where they graze nothing but rich, herbal pasture.
This is a cut with real character. Its open grain welcomes marinades and seasoning, while gentle marbling ensures a juicy, flavourful result once cooked. When seared quickly over high heat, Bavette develops a lovely caramelised crust while the centre stays tender. A short rest and a thin slice across the grain brings out its best.
