Taken from the featherblade, our Pasture Fed Flat Iron Steak offers a lovely balance of flavour and tenderness. This cut gets its name from its distinctive shape, much like an old-fashioned iron, and is naturally fine-grained with a gentle marbling that brings depth without heaviness.
Flat Iron cooks beautifully over high heat whether in a hot pan or on the barbecue. We suggest keeping it rare or medium to retain its tenderness. Once rested, slice it thinly and serve with simple sides for an easy, satisfying supper.
