Cut from the shoulder end, pork neck is a well-worked muscle laced through with fat, which is exactly what makes it one of the best joints for slow cooking. From native breed pigs, reared slowly and properly free range, this cut has enough marbling running through it to stay moist over a long, low cook, whether that's in the oven, a slow cooker, or over coals.
Season it well and give it time. Low and slow in the oven, covered for the first stretch and uncovered towards the end to build colour on the outside, is the simplest way to get tender, pull-apart meat. It also takes well to a marinade or spice rub left on overnight, and holds its own on a barbecue if you're cooking over indirect heat rather than straight over the flame.
Rest it properly once it's out, then carve into thick slices or pull it apart with a couple of forks. It's a cut that forgives a bit of extra time in the oven, and rewards it with proper depth of flavour.

All of our meat is delivered frozen, ready to go straight into your freezer. Once defrosted, it can be stored in the fridge and enjoyed within three days.
