Fresh native breed pork skin from slow-reared British pigs, the foundation for perfect crackling, or rendered down into the fat that makes the best roast potatoes of your life.

Pork skin has two great purposes in the kitchen, and both of them involve patience and high heat. The first is crackling: score the skin deeply, rub generously with fine salt, and leave uncovered in the fridge overnight to dry. Cook at 220°C for 20–25 minutes until it has blistered and shattered, the result is lighter, crispier, and far better than crackling attached to a joint, because you can control the process entirely. The second purpose is lard: render the skin slowly in a low oven (150°C for 2 hours) until the fat runs clear and the skin turns crispy. Strain the fat and use it to roast potatoes, fry eggs, or cook anything that benefits from richly flavoured animal fat. The crispy residue is chicharrón, eat it warm with a pinch of sea salt and nothing else. From native breed British pigs, raised for flavour rather than leanness. 500g per pack, excellent value for what it can do.

Delivery

We offer Next Day Delivery on orders placed by 1pm Monday to Thursday (excluding Highlands & Islands postcodes). During busy periods such as Christmas and Easter, cut-off times and lead times may change.

Storage

All of our meat is delivered frozen, ready to go straight into your freezer. Once defrosted, it can be stored in the fridge and enjoyed within three days.

Our ambient goods can be safely stored in a cool, dark place.

All dairy products should be kept refrigerated and used before the best before date shown on the packaging.
