Thick, collagen-rich pasture fed beef shin from British grass-fed cattle, the slow-cook cut that rewards patience with a sauce-enriching gelatin and meat that simply falls apart.

Beef shin is one of the best slow-cook cuts available, and the reason is entirely structural: the shin is a hardworking muscle surrounded by collagen, which breaks down during long, gentle cooking into gelatin and enriches the surrounding braising liquid into something thick, glossy, and deeply satisfying. From British pasture-fed cattle, this shin has the honest, full-bodied flavour of a grass-fed animal rather than the blander quality of fast-grown beef. Season and brown well, then braise with red wine, beef stock, tomatoes, and garlic at 150°C for 3–4 hours until the meat is falling from the bone and the sauce has reduced to something remarkably good. Serve sliced over creamy polenta with gremolata, or shredded into a pasta sauce with wide pappardelle. Whole shin can also be prepared ossobuco-style, cooked upright in the braising liquid until the marrow softens in the bone. 500g per pack.

Delivery

We offer Next Day Delivery on orders placed by 1pm Monday to Thursday (excluding Highlands & Islands postcodes). During busy periods such as Christmas and Easter, cut-off times and lead times may change.

Storage

All of our meat is delivered frozen, ready to go straight into your freezer. Once defrosted, it can be stored in the fridge and enjoyed within three days.

Our ambient goods can be safely stored in a cool, dark place.

All dairy products should be kept refrigerated and used before the best before date shown on the packaging.
