Sliced kidneys, four to a pack, from grass fed lambs. Kidney has a stronger flavour than most offal, but it's a good deal more approachable than its reputation suggests, especially cooked hot and fast so it stays pink in the middle rather than pushed to grey.
Trim away any tough core or membrane if it hasn't been done already, then slice each kidney into rounds or halves. Get a pan properly hot with a little oil or butter, and cook the slices in a single layer for no more than a couple of minutes a side. Any longer and they turn firm and lose the point of cooking them at all. A splash of sherry or brandy at the end, deglazed with the pan juices, is a classic way to serve them, or simply with plenty of black pepper and something to mop up the buttery juices.
Four kidneys makes a proper starter for two, or a smaller plate for one with a good appetite.

All of our meat is delivered frozen, ready to go straight into your freezer. Once defrosted, it can be stored in the fridge and enjoyed within three days.
