Richly flavoured pasture fed lamb mince from British grass-fed flocks, with the natural fat content and grassy depth that makes lamb mince a genuinely versatile kitchen staple.
Lamb mince from pasture-fed British sheep has a distinctly different character to the paler, blander version from intensively raised animals: a deeper, slightly mineral flavour from the grass diet, and a natural fat content that renders beautifully in the pan without needing additional oil. It's the foundation of a properly made shepherd's pie, brown with onions and carrots, add beef stock and a splash of Worcestershire sauce, and top with firmly mashed potato before baking until the top is golden and slightly crunchy. It also makes excellent lamb kofta: mix with grated onion, cumin, coriander, and a pinch of cinnamon, form around flat skewers, and grill over high heat for 8–10 minutes. Or use it in a Bolognese-style slow-cooked ragu with red wine, tomatoes, and fresh rosemary for a pasta sauce that tastes unexpected and completely right. 250g per pack.
