Lamb offal doesn't get the attention it deserves, and sweetbreads are the reason it should. From pasture fed, native breed lambs, this is the thymus gland, a small, delicate cut with a mild flavour and a texture that turns from soft to properly crisp given the right heat.
The trick is confidence rather than complication. Soak them briefly to draw out any blood, then poach gently until just firm before peeling away the membrane. From there, dust lightly in flour and fry hard in a pan with butter and a splash of oil until golden and crisp on the outside, meltingly soft within. A squeeze of lemon and a few capers is about as much as they need.
This is a cut that rewards using the whole animal properly, and once you've cooked sweetbreads well, they tend not to last long on the plate.
We offer Next Day Delivery on orders placed by 1pm Monday to Thursday (excluding Highlands & Islands postcodes). During busy periods such as Christmas and Easter, cut-off times and lead times may change.
All of our meat is delivered frozen, ready to go straight into your freezer. Once defrosted, it can be stored in the fridge and enjoyed within three days.
Our ambient goods can be safely stored in a cool, dark place.
