Slow-grown bronze turkey leg, boned for ease without losing a drop of flavour, a generous, richly dark cut from properly free range birds reared the right way.
Turkey leg is one of the most underrated cuts on the bird, and the boneless version makes it genuinely practical for midweek cooking as well as centrepiece occasions. Our bronze turkey comes from properly free range British farms where birds are given space to roam, grow slowly, and develop the muscle tone and flavour that intensively reared turkey simply doesn't have. The leg meat is darker and more richly flavoured than the breast, with natural fat running through it that keeps it juicy through long cooking. Stuff the cavity with a mixture of sausagemeat, sage, and lemon zest, roll tightly, tie with string, and roast at 180°C for approximately an hour and a half. Or slow-braise it in chicken stock with garlic, thyme, and white wine until the meat falls apart into something deeply satisfying. At 1kg, it's the right size for four people and works brilliantly as an alternative to a whole bird for smaller gatherings.

All of our meat is delivered frozen, ready to go straight into your freezer. Once defrosted, it can be stored in the fridge and enjoyed within three days.
