A richly marbled pasture fed beef chuck steak from British grass-fed cattle, at its best slow-braised into something silky, or quickly pan-fried for a more robust, full-flavoured result.
Chuck steak occupies an interesting middle ground in the butcher's range: it has the marbling and connective tissue of a slow-cook cut, but it's thin enough to pan-fry quickly for a more informal, characterful steak. From British pasture-fed cattle, this cut has a deeper, more complex flavour than the leaner prime cuts, a result of the harder-working shoulder muscle and the natural grass diet. For slow cooking, dice and braise with dark beer, root vegetables, and a good handful of pearl onions for 2–3 hours until the meat is falling apart. For a quicker result, cook in a hot cast-iron pan with butter and thyme, 3 minutes per side, rest for 5 minutes, and slice against the grain. It won't be as tender as a ribeye, but it'll taste more of beef, and that's often what's wanted. 150g per steak.

All of our meat is delivered frozen, ready to go straight into your freezer. Once defrosted, it can be stored in the fridge and enjoyed within three days.
