A pasture fed beef fillet tail from British grass-fed cattle, the tapered end of the most prized cut in the house, with all the tenderness and considerably more versatility than the middle cut.
The fillet tail is the narrower, tapered end of the beef fillet, it has the same exceptional tenderness and fine grain as the centre cut, but its irregular shape makes it more affordable and arguably more interesting to cook with. From British pasture-fed cattle, this is beef with genuine flavour depth rather than the occasional blandness of conventionally reared fillet. Slice it thinly and use it for a quick carpaccio: freeze for 30 minutes to firm up, slice paper thin, and arrange on a cold plate with good olive oil, lemon juice, capers, and shaved Parmesan. Or cut into small steaks and pan-fry hard for 2–3 minutes per side, they cook quickly because of their size and are at their best medium-rare. Alternatively, cut into strips for a beef stroganoff where the fillet's tenderness makes the dish genuinely luxurious. 130g per piece, a single portion.

All of our meat is delivered frozen, ready to go straight into your freezer. Once defrosted, it can be stored in the fridge and enjoyed within three days.
