Deep, heavily marbled pasture fed beef short ribs from British grass-fed cattle, built for the slow oven or the smoker, with collagen-rich bones that turn hours of cooking into something exceptional.
Beef short ribs are the cut that low-and-slow cooking was invented for. From British pasture-fed cattle, these ribs have the heavy marbling and connective tissue that means hours in a low oven don't dry them out, they transform, as the collagen breaks down into gelatin and the fat renders through the meat, leaving something that is at once incredibly rich and impossibly tender. Season generously with salt and pepper, sear hard in a heavy pan to build colour, then transfer to a lidded dish with beef stock, garlic, thyme, and a splash of red wine. Cook at 150°C for 4–5 hours until the meat is pulling away from the bone. Serve as they are with pickled vegetables and good mash, or shred and pile into soft brioche buns with a spoonful of sharp coleslaw. For the smoker, 6–8 hours at 120°C with a generous dry rub produces something close to perfection. 500g per pack.
