Tender, richly marbled pasture fed lamb neck fillets, a seriously underrated cut from British grass-fed flocks that slow-braises beautifully or takes on a marinade and a hot pan with equal ease.
Lamb neck fillet is one of those cuts that experienced cooks have quietly known about for years while the fashionable cuts get all the attention. From British pasture-fed lamb, the neck fillet is a long, cylindrical piece of meat with natural fat running through it that keeps it juicy through long cooking and gives it a flavour depth that the leaner rack or loin simply can't match. For slow cooking, cut into large pieces and braise with Moroccan spices, preserved lemon, and honey for 2–3 hours until the meat is yielding and the sauce is fragrant. For a quicker option, marinate whole fillets overnight in olive oil, rosemary, garlic, and lemon, then sear in a hot pan for 4 minutes per side and rest for 5 minutes before slicing on the diagonal. The meat should be pink, the flavour deep and grassy. Serve with roasted aubergine and a yoghurt dressing. Outstanding value for the flavour delivered. 250g per pack.
