Heat in a curry powder should come with flavour, not instead of it, and Steenbergs have built this organic hot blend accordingly. Alongside the chilli that provides the kick, there's a serious supporting cast of organically grown coriander, cumin, fenugreek, and black pepper, spices that give the heat a context and make the finished dish considerably more interesting than simply hot. Fry the powder in oil with onions and garlic until the kitchen smells properly aromatic, then use it as the base for a lamb or beef curry that you intend to leave to cook slowly for an hour or more. The flavours develop and deepen through long cooking in a way that quick-cooked dishes don't allow. It also works well stirred into a lentil dal alongside a handful of spinach, or as the spicing for a tomato-based prawn curry that cooks in under 20 minutes.
